Noel Hassapladakis was born in the UK. His heritage is Greek, Egyptian, French and Lebanese on his father, Leon’s side and Italian American and Filipino on his mother, Barbara’s side. This melting pot of nationalities resulted in a passion for food and a curiosity to explore and learn cooking styles from all over the world. Obsessed with everything meat, he discovered Biltong while living with a South African on arrival to New Zealand which led to consuming far too much of this tasty treat.
Meeting Heather in 2020, he spent the early days of their relationship recreating foods she loved and missed from home. Peri Peri chicken, Potjie (Oxtail, Short Rib, Beef Cheeks, Lamb Shanks and Beef Shin to name a few), Bobotie, Vetkoek and many other dishes. He also embarked on a journey to perfect Biltong for her. Researching and refining over the years until the moment he hit the balance of flavours we use today.
Heather finally said it was the best Biltong she had eaten. That moment is the reason that Bilt-OMG! was born. When not making Biltong, you’ll find Noel travelling all over New Zealand teaching people to cook American Barbecue and over fire cooking using charcoal and wood.
Heather Manfield was born in Roodepoort, South Africa and moved to New Zealand 6 years ago.She is a direct descendant of the 1820 settlers in South Africa. Her parents, Tom and Barbara still live in South Africa and she has fond memories of her father cooking, large braais with family and friends and of course consuming copious amounts of the healthy snack that is Biltong.
Heather’s love for travel has taken her all over the world and involved somewhat of a gastronomic adventure developing a passion for food through her travel. She loves cooking food from around the world and creating new dishes where protein features, but vegetables are also the hero. She loves balance and is focused on good nutrition most of the time but loves to indulge from time to time! Her favourite meat is lamb, so New Zealand is heaven, closely followed by beef and more recently developing an understanding that not all meat is created equally.
She has been indulging in some of New Zealand’s finest meat products including Wagyu over the last few years and has been instrumental in the flavour development and the textural experience that Bilt-OMG! offers today.
When Heather and Noel came together, that combined force and curiosity for all things food meant that they are completely aligned when it comes to using the very best ingredients to produce the highest quality products that evoke emotional and nostalgic responses when people eat them. Uncompromising on quality and flavours with no shortcuts taken. It simply has to be the best before they share it with people.
